Onder de nieuwe duinboulevard tussen Cadzand-Bad en Retranchement bij het natuurgebied &#8220;Zwin Natuurpark&#8221; en het afwateringskanaal &#8220;Uitwateringskanaal&#8221; verwelkomt de &#8220;Zilt &amp; Zout&#8221; als een modern, gemetseld, witgeschilderd, met rieten dak ingericht eenkamerrestaurant: de 55-plaatsen tellende gastenkamer biedt uitzicht op de open keuken en het werkterrein van chef-kok Dimitri Valckx en zijn kleine keukenbrigade. Zout&#8221; vriendelijk. De gebruikte beige, zanderige en grijze natuurlijke materialen, steen en beton, in hun &#8220;ruwe &amp; brute&#8221; staat, cre\u00ebren een rustieke, huiselijke en tegelijkertijd moderne sfeer. Een standbar aan de ingang nodigt de gasten uit voor een apertif, digestief of een praatje met Annika; een terras met 70 zitplaatsen strekt zich uit naar het zuidwesten, dat in het seizoen de fietsers en wandelaars van de duinboulevard tussen Cadzand-Bad en Knokke-Heist langs het &#8220;Zwin&#8221; met plezier verwelkomt.<br \/>\nHet menu van de &#8220;Zilt &amp; Zout&#8221; komt &#8220;natuurlijk&#8221; overeen met de naam van het restaurant en de aard van de keuken &#8211; &#8220;zeezout &amp; zout&#8221;-gerechten met ingredi\u00ebnten en ingredi\u00ebnten uit de Zeeland-Vlaamse natuur staan op de voorgrond: mosselen, tong, oesters, scampi&#8217;s of kreeft. Zout&#8221;-retranchement<\/h2>\n<p>Na de begroeting vanuit de keuken met smakelijke en decoratieve boter en zelfgebakken brood, besloten we te beginnen met de rundercarpaccio &#8220;Deining&#8221; ter nagedachtenis aan het oude restaurant in Groede, dat eveneens onder de dijk ligt. De flinterdunne, bladdunne plakjes die op de tong gesmolten zijn, de lichte marinade van olijfolie, knoflook, pijnboompitten en ruccola, evenals de delicate besprenkeling met Parmezaanse kaas, benadrukten subtiel de eigen smaak van het rundvlees.<br \/>\nHet maritieme &#8220;Zilt &amp; Zout&#8221; karakter verrukte ons ook met de twee verschillende hoofdgerechten, zoals de voorgerechten geserveerd in trendy &#8220;Earth&#8221; keramische gerechten: de pasta &#8220;Zeevruchten&#8221; gemaakt van fijne spaghettini was precies goed met mosselen, scampi&#8217;s en sint-jakobsschelpen in porties, pasta en &#8220;topping&#8221; mengeling en smaak. En voor de hongerige niet geassocieerd met te veel mossel-opening werk. De eveneens bevredigende &#8220;gevulde vissoep met halve kreeft&#8221; kwam met een licht tomatenbrouwsel, waarin scampi&#8217;s en kleine filets van vier verschillende vissen een &#8220;zilte&#8221;
